A grand opening weekend complete with tastings, free cones, giveaways and a ribbon cutting ceremony will be held Saturday and Sunday, June 5 - 6 at 2:00 pm.

Derived from the nickname of the handle on an old-fashioned soda fountain, Bobtail will produce each homemade batch in the on-site, glass-enclosed ice cream "factory". Customers will be able to watch as more than 20 classic, seasonal and locally inspired ice cream flavors, such as Peanut Butter Chocolate Chip and Signature Sunset‘ (merlot ice cream with pieces of dark chocolate), are created right before their eyes. The menu also features a low-carb vanilla, fat-free sorbets, and low-fat frozen yogurt for those seeking a healthier indulgence.

Beyond the factory, the action continues as soda jerks prepare fresh sundaes, classic sodas, floats, and innovative creations like the Cream Espress (a thick vanilla milkshake topped off with a double shot of espresso). Customers can experience the action from the counter seats at the end of the production line and a marble-top bar overlooking the factory.

Unlike most ice cream shops, when the inevitable Chicago winter rolls around, Bobtail doesn’t miss a step, since each day begins at 6:00 am with a freshly baked batch of sweet Belgian waffles and muffins, Lavazza™ coffees and espressos, organic teas by Numi™, and fruit juices. Other year-round warm specialties include homemade hot chocolates and hot-fudge fondue.

The Bobtail Soda Fountain concept was initially developed by Jeff Wilcoxon and Christopher Hill through the Edward L. Kaplan New Venture Challenge, an annual business plan competition at the University of Chicago, Graduate School of Business (GSB). Inspiration came from the Wilcoxon’s family-owned Johnson’s Real Ice Cream in Bexley, Ohio and 50-years of small town ice cream tradition. John Rutledge, a fellow GSB alumnus, successful Chicago-based hospitality/real estate entrepreneur and private equity investor, and co-founder and president of The Oxford Capital Group began collaborating with Jeff and Chris in the spring of 2003. He signed on as lead investor, strategic advisor, and CEO of the new company.

"Chris and I thought it would be great if we could take this plan and continue the tradition of my family’s ice cream shop," says co-founder Jeff Wilcoxon. "I grew up watching my father and grandfather serve the best ice cream in town. We’ve taken their proven formulas and refined them into our own recipes. We are ready to deliver a unique soda fountain experience to Chicago. It’s been fun to watch people rate our ice cream ahead of all the prominent brands during taste tests. Low Carb Snacks That Kids And Adults Will Love

It's the highlight of any school day - recess. This is applicable to any grade-schooler. But as parents, we pretty much have to put healthy and low-carb snacks in our children's lunch boxes. Bear in mind that when a kid gains weight at such a young age, he will have a difficult time shedding the excess pounds when he gets older.

Cakes, candied cereals, ice cream, flavored popcorn, cookies, candies, muffins and all kinds of pastries may seem so appealing. I bet your mouth is watering simply by reading that passage. Sure these are low in fat, but take note, these are relatively high in calories.

But there is a way for us to satisfy our sweet tooth craving the Low Carb Way. First of all, you must have the control to not reach in for the chips and crackers in between meals, or else you're engaging in a low-carb diet will turn out to be completely pointless.

A low carb snack must ideally have healthy fat, protein and fiber. If you are having eggs or jerky, you might as well have vegetables with it.

Here's a rundown of low-carb snacks you can consider munching on:

- Celery with tuna salad

- Celery with peanut butter

- Hard boiled eggs

- Pickles and cheddar cheese

- Berries and cottage cheese

- Nuts. Best serve when kept in freezer.

- Sunflower seeds

- Pumpkin seeds

Take note though that just because these are low-carbohydrate, these snacks are healthy. It may be popular and has already dominated the snack food companies and market but as a consumer, you must still be careful when choosing the low-carb snacks you will provide yourself and your family.

First off, low carb snack bars. There are tons of snack bars to choose from in the grocery. Not all of them provide good nutrition. Some low carb snack bars are there to maintain phases of low carb diets because they still contain calories. The sugar they have contain alcohol. Alcohol sugars in low carb snack bars will be difficult to digest and result to gas.

If you choose to settle for low-carb cookie mixes, then the best we can recommend are the low-carb chocolate chip cookies mix and the low-carb peanut butter cookies mix. Simply because, peanut butter is already an example of low-carb snack and chocolate chip cookies' sugar content is balanced out with the help of the eggs and butter (light) mix.

If you would like to try out low carb shakes, make sure to read the labels so you will have an idea of the nutritional content. Double check if the shake mix are low on glycemic.

As pointed out by Dr. Robert Atkins in his Atkins diet, the cause of weight gain is "stodgy" food like bread and potatoes. More often than not, dieters trying out the low-carb diet often complain that they miss eating bread. If it is any consolation, there are some low carb breads out there in the market. These low carb breads have added soy flour to the mix.

But that does not mean that this bread is wheat free. They are also not gluten free. So the best way for you to achieve success in the low-carb diet is to not eat bread entirely. Yeah, you will miss it but it is for the best.

1. Low-fat deli meat sandwich w/ 100% whole wheat bread. (Top with any veggies you enjoy and use mustard instead of high fat mayo)

2. ½ cup or scoop of tuna or chicken salad made with reduced fat mayo on wheat toast or a pita topped with sprouts and cucumbers.|Half cup or portioned scoop of chicken or tuna salad that was made with reduced fat mayo. Make a sandwich with wheat toast or a pita and top with veggies.} Sprinkle lemon pepper to taste.

3. If ordering a salad while eating out steer clear of any fried topping like wonton's, tortilla chips or onions and order all protein to be grilled or baked, never fried. Reduced fat or calorie dressing on the side.

4. Baked or grilled chicken or fish of your choice with a side of steamed vegetable and a garden salad.

5. On a cold day, make a bowl of tomato based vegetable soup. It can contain meat or be vegetarian. Pair with whole grain crackers or toast.

Sweet spreads, comprising jelly/jam/preserves, honey, and peanut and other nut butters, saw sales increase 11% between 2000 and 2005. These sales, which include FDM channels, natural food stores and specialty/gift/department stores, have grown slightly but steadily in current terms every year since 2000, except from 2004 to 2005. From 2004 to 2005, sales in these channels remained stable at approximately $ 1.8 billion.

The slight growth each year in the sweet spreads category has not outpaced inflation, resulting in a general 2% decline in sales since 2000. A number of factors have influenced the sweet spreads market in the six years studied here. Firstly, the products do not usually stand on their own as food products. Rather, they are ingredients used in making sandwiches or snacks, garnishing ice cream or yogurt, or in baking, cooking, marinating, and other recipe preparations. As such, part of their success relies on the relative popularity of other ingredients or of cooking and baking techniques. Low-carb diets have not supported sales over time.

The products also lack an image of convenience. Many consumers eat breakfast and lunch on-the-go and manufacturers have invented a host of "grab and go" food items that provide instant gratification. While making a sandwich or a snack with peanut butter and honey or jelly is not a complex operation, it still takes longer than taking a ready-made snack bar or pastry to eat on the run. Understanding this difference, J.W. Smucker successfully launched "Uncrustables," pre-made peanut butter and jelly sandwiches for grab-and-go eating, in 2004. Their success came at the expense of sweet spread sales, however, as consumers are trading the products for the ready-made items.

But, peanut butter, honey, jam and jelly remain household staples, working in combination for many lunches. Still, as more products are unveiled with these items as the main flavor, manufacturers must ask themselves how much peanut butter or fruit jam consumers will eat in a typical day before being "maxed out." The situation calls for innovations in the category from new, distinctive tastes to more convenient packaging.

This report defines sweet spreads as the following products:

Peanut and other nut butter, including almond butter and cashew butter. Flavored nut butters (e.g. Nutella) are also included, as are peanut butters that are mixed with jelly in the packaging.

Jam, defined as a thick mixture of fruit, sugar that is cooked until the pieces of fruit are very soft and almost formless.

Jelly, defined as a soft, semisolid food substance with a resilient consistency, made by the setting of a liquid containing pectin or gelatin or by the addition of gelatin to a liquid, especially such a substance made of fruit juice containing pectin boiled with sugar. Jelly does not contain pieces of fruit, but is smooth and clear in appearance.

Fruit butter, which is defined as a sweet spread for bread made by stewing fresh fruit with sugar and spices until it becomes thick and smooth. Fruit butters do not contain dairy products.

Preserves, defined as fruit cooked with sugar and usually pectin, used as a spread or filling. Preserves differ from jam in that the chunks of fruit are medium to large rather than the texture of thick puree.

Honey, in comb, liquid, or solid form. Flavored and unflavored honeys are included.

Low Carb Bread Recipe

Many people are used to eating a lot of bread and when they can't eat the usual high carbohydrate bread or bagels, they don't know what to eat for breakfast anymore. This is especially true in some countries, where it is common to eat bread three times a day, and where the only warm meal is dinner.

People are often used to eating certain things for certain meals. For a lot of people this isn't important anymore on a low carb diet. Personally I rarely eat bread anymore, although there are a lot of good low carb bread recipes available. Today I actually had chicken filet with cauliflower and creamed sauce for breakfast, I often eat leftovers for breakfast.

If you are one of the many low carbers that misses bread for breakfast, and if you like whole grain type of breads, you might enjoy this bread recipe.

Low carb flax seed bread

Flax, also called linseed, has a lot of fiber and therefore it is great to use in low carb breads.

Almost all of the carbs in flax are fiber, the net carbs are close to 0.

Here's what you will need:

1 3/4 cups of flax seed meal
1/2 cup of wheat bran
1 tablespoon of baking powder
1 teaspoon of salt
5 beaten eggs
½ cup of water
4-5 tablespoons of cooking oil

Mix the dry ingredients and then add the wet ingredients. Pour the batter into a sheet pan and bake for 20 minutes at 350 degrees F. Cut your bread into slices and enjoy.
